It looks like this course is a bit out of date and at least some of the tasks to be done on the Kovan network.
Is it possible to do the assignments on Kovan or do you recommend perhaps another network?

I have created a guide for that minor issue related to the kovan network, please give it a look 
https://app.aave.com/ have now a “testnet” mode that you activate by their settings icon.
That testnet mode is available in multiple networks like polygon mumbai testnet or goerli testnet.
