I strongly recommend books written by Andreas Antonopolous. You can find his books here https://antonopoulos.com/books/
He has his book on Bitcoin called “Mastering Bitcoin”, it dives deep into the technology behind bitcoin and how bitcoin actually works. “Mastering Bitcoin” might be a bit technical from time to time.
His other book “The Internet of Money” is a very non-technical book talking about the essence of money and how Internet is transforming money. You don’t need to have any technical skills to understand this book.
He will also be releasing a book about Ethereum next year! All in all I’m a huge fan of Mr Antonopolous.
